Chicken Lasagna Roll-Ups

Ingredients

6 lasagna noodles, uncooked
1 pkg. precooked, cubed chicken breast (from the freezer section)
1 cup Ricotta cheese
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
1 tsp. Italian seasoning
2 cups spaghetti sauce
1 cup part-skim Mozzarella cheese

Directions

  1. Preheat oven to 375º.
  2. Cook noodles as directed on the package.
  3. When cooked, rinse the noodles with cold water and drain well.
  4. Mix Ricotta cheese, chicken, Parmesan cheese, egg and seasoning.
  5. Spread 1/3 cup of the chicken mixture onto each noodle.
  6. Roll up tightly; place, seam sides down, in 9-inch square baking dish.
  7. Pour spaghetti sauce over roll-ups; sprinkle with Mozzarella cheese.
  8. Bake 30 minutes or until heated through.

Great Substitute:
Substitute cottage cheese for the ricotta cheese.
